Course Overview

Do you have a passion for preparing food and want to work in the hospitality sector? This course will further develop your existing skills and enhance your knowledge of the industry, providing you with the specialist practical skills and technical knowledge you need for work or further study. The qualification is structured to allow you to work with a wide range of commodities in the advanced preparation, cooking and presentation of dishes in a professional kitchen. You will develop the skills and techniques you need to produce a variety of dishes, enabling you to take on different professional roles.

You will learn about a range of technical and professional topics, including:

– The principles of food safety supervision for catering
– Supervisory skills in the hospitality industry
– Exploring gastronomy
– Advanced skills and techniques is producing vegetable and vegetarian dishes
– Advanced skills and techniques in producing meat dishes
– Advanced skills and techniques in poultry and game dishes
– Advanced skills and techniques in producing fish and shellfish
– Produce dough and batter product
– Produce petits fours
– Produce paste products
– Produce hot, cold and frozen desserts
– Produce cakes, biscuits and sponges
To enrol on this course, you must have successfully completed a Level 2 qualification in cookery or have gained equivalent industry experience.
Work experience in the cookery industry is essential for Level 3.


A successful interview.
You will need to successfully pass set and marked assessments with a total of 100 credits from the above units to gain your final qualification. You will be assessed throughout the year with both practical and theory assignments. Your final qualification is a Level 3 Diploma in Advanced Professional Cookery.

You will need to commit to a minimum of three hours a week of home study, as well as completing 60 hours in an industry-related placement, which is an essential part of your course, giving you hands-on practical experience of working in the industry.
A kit and uniform will be required, you will also need a level 3 book which we will discuss with you at your interview. In cases of financial hardship, you may be eligible for bursary funds to help with the cost of this.

Educational activities and competitions are an important part of the course and may incur an additional cost.
