Cater­ing stu­dents com­plete suc­cess­ful first lunch service

Catering students at Wiltshire College & University Centre's Salisbury campus have completed successful first lunch service at the Wessex Restaurant.

Wiltshire College & University Centre’s student-run restaurant at the Salisbury campus successfully re-opened its doors to the public this week with the first lunch service of the academic year.

Under the guidance of Lecturer in Professional Cookery Justin Mundy, students on the Level 2 Technical Certificate in Professional Cookery course served a fully-booked Wessex Restaurant.

In total, 30 paying guests were treated to a superb three-course lunch, consisting of dishes including tempura salmon, chicken Caesar salad, roast beef, crumbed hake, cheesecake and sticky toffee pudding.

Sophie was one of the students working on the dessert station and said: “It was really good but definitely a little bit stressful with it being the first proper service and it being fully booked but I think everything went well overall.

“I have always loved cookery since I was little and working in a kitchen or with food is something I have always wanted to do. I want to work in patisserie as I love baking and making anything pastry-wise.”

Henry oversaw the cooking of the hake main course and said: “We were rushed off our feet but I think it was worth it as all the food we sent out looked great and we heard good things back from the tables. I was working on the fish mains – I think it went OK but it was very hectic as I had a lot going on.

“Working in hospitality isn’t really a career I thought about but when I finished school, I wasn’t sure what I wanted to do. I saw this course and thought I’d sign up and I am absolutely loving it so far.”

The Wessex Restaurant is based at the College’s Salisbury campus on Southampton Road and runs a weekly lunch service from 11.45am to 1pm every Thursday, offering a delicious freshly-prepared three-course meal for £12.

Strong bookings have been secured throughout November and the restaurant will also offer a special Christmas lunch menu in December.
