Course Overview

A commis chef is the most common starting position in many kitchens and in principal the most typical junior culinary role. A commis chef prepares food and carries out basic cooking tasks under the supervision of a more senior chef.The primary objective of the commis chef is to learn and understand how to carry out the basic functions in every section of the kitchen. Therefore, having the opportunity to experience, consider and value each section with a view to choosing an area where you?feel most inspired.

What will I learn?

This apprenticeship is broken down into four sections; Culinary, Food Safety, People and Business. Each section will consist of knowledge units, skills units and behavioural units. Students will cover units such as reviewing and refreshing menus in line with business and customer requirements, maintain a clean and hygienic kitchen environment at all times, complete kitchen documentation as required and use suitable methods of communication and operate in a fair and equal manner that demonstrates effective team working.

Study, Assessment and Qualifications

The duration of the Commis Chef apprenticeship will take 12 months to complete and you will be required to attended college for one day per week during term time.

Entry Requirements

- Minimum GCSE grade D (or equivalent) in Maths and English.
- All applicants will be required to pass initial assessments in Maths, English and ICT. An Entry Level 3 must be achieved for acceptance onto the apprenticeship programme.
